Basically how do I do one? I’ve never done adjustments with shims before and it seems considerably more complicated than the valve adjustments on my VW.
Any help would be appreciated!

You need to get a shop manual for the instructions and pictures.
It is not difficult. You need a DOHC shim tool and a small pick or access to compressed air. You remove the valve covers (and spark plugs to make it easy to turn the motor). You rotate the motor (by hand or by pushing the car while in 5th gear) and measure the lash with the cam lobe 180 degrees out from the shim (pointing away). Then you calculate the clearances you need and order shims.
Once your shims come in you use the shim tool to depress the bucket (this is explained best in the shop manual), the pick (or air) to remove the shim, and insert a new one.
I also use a magnetic tool because the shims tend to fall to the back of the cam housing.
