Just a couple of quick questions:

Should some kind of sealant be used on my new head to cam box gaskets? How about on the cylinder head gasket?

No and hell no. If you need a sealant then a surface is not prepared correctly. You can get a head-to-cambox gasket with a silicone bead in the center, which seals up minor imperfections if necessary. On the head gasket, absolutely not.
