I came across a 1592 engine, everything is there except the head. I have a 2000
head that is in ok shape, would that work? I think everything will fit, except
for the water jackets, but, I can just drill those to make them fit. Correct?

I know a 1592 head will fit on a 2000 block, so I don't see why the reverse won't work. However there will be a decrease in performance as the 2L head has a bigger combustion chamber than the 1592 head. Your compression will be lower, and the stock 8:1 is already low enough.
An 1800 head will fit and keep the stock compression.

Yes, the 1592 is the same block family and shares the same characteristics of the 1.8 and 2.0 engines in regards to coolant passages and so on. All are 132 series blocks.
Actually all the heads will fit, but the 1438/1608 heads don't align properly on the front coolant passage.
On the 132 series engines heads, the 1 and 4 combustion chambers are not centered on cylinders 1 and 4 in the block.
