I have read about people using anti-seize to use on nuts. Is this just teflon tape like plumbers use on fittings or something else?

It's usually a paste like material in a tube or the like.

You should at least be using this on the threads of your spark plugs to make life simpler down the road.

besides spark plugs, it should be used on all exhaust nuts and bolts and any bolt that goes into aluminum

I've used it "sparingly" for decades on the back of brake pads to prevent squealing.
