Hi:

If I do not turn on the engine in > 2 weeks or so. I really have to engage the starter for a long time before the engine gets going. If i run the engine for 15 minutes or so and turn it off, when I turn it back on it starts right up.

Should I run some fuel injector cleaner through the system to see if that helps?
Do I just have too many carbon deposits in my cylinders?
I'm pretty sure air intake and fuel pump are working pretty good.

Check the cold start injector.

yeah my 1978 124 spider is really tough to start for the first time of the day but after that it starts quick. I have to pump the pedal about 5 times and run it for 10 minutes the first time of the day. i'm also wondering if i can do anything about this.

Not familiar with FI fiats, do they have a pressure valve? A valve which holds fuel pressure in the system? If they do, I would check to ensure that is working. If its not holding pressure, you will have to crank for a bit until the pressure builds. That being said, are they electric fuel pumps (again, no Fiat FI experiance), if so, cycle the ignition several times to have the electric fuel pump build pressure before cranking, see if that helps.
