Quick re-cap:
Great drive for about 2.5 hours on mostly highway, no issues whatsoever. Pulling off highway to side roads headed home, car "de-tunes" at the flick of a switch. Still goes, but you can just hear, and feel the engine is not happy. This has happened before (always without warning,) and car rights itself away on its own. Sometimes, it last for a few moments, unfortunately this time all the way back to the garage. Don’t know next time I drive it if it’s cleared up?
(2L, dual webers. Pop the hood all looks okay. Can still drive, but it feels,like it’s on 3 cylinders. )

Bad ground or loose connection somewhere would be my first guess.

I can see a ground wire attached from the engine block to the frame. Presumably that would not be it? Would that change your Opinion? It’s so instantaneous in nature, that I would be led to believe its carburetorration related (something sticking.)
Engine is within 2 years of rebuild ALL components new

It probably wouldn't be that ground, but there are more ground points than that in the engine bay. It might be a carb issue, but if you're two years out from a rebuild, as long as the rebuild was done right and you're not dogging the engine every time you drive, the carb shouldn't be having issues.
