Non-Fiat Wheel Question

So I just bought a 2011 VW Eos that has 17" OEM wheels. I am looking at replacing the wheels with a used 18" AT Italia set. When I look online to purchase new wheels they have a generally 42-45 offset for my car. The AT Italia's have a 37 offset. I am trying to do some research to find if these would work, but thought I would ask on here also. Thanks.

How wide are the 17" and what is the offset and how wide are the 18"? Also what is the with of the tires now and how wide are the new ones going to be?
If the offset of the new wheels is bigger than the oem wheel you can use spacers to make up for it, if you need to.
You have to do the math on the car to make sure nothing is scratching.

The two wheels are both 7.5" wide. The offset of the 18's are 5mm smaller than my OEM wheels, so using spacers would not work. I am concerned the 5mm may make the tires rub. Most places are recommending a 225/40/18 for an 18 x 7.5" wheel. I
