more on 1592 head on a 2000
If I put my 1592 head on a 2000 which head gasket, intake manifold, carb and cams should I use? Which thermostat can I use, the remote 2000 type or the one in the head on the 1592?

Use a 2000 head gasket, an 1800 intake manifold if you're running a single carb, a 2000 exhaust manifold, cam towers from either the 1592 or 2000 (they are the same). I would use the external thermostat setup from the 2000. I've done this swap a few times, most recently on the 1979 project: http://www.artigue.com/fiat/1979-spider-cs2-green and the car is a rocket. It results in an extremely clean setup. You can also use a 2000FI setup on it if you already have it.
Is money an issue? If not:
Carb = 34 ADF
Cams = Stock or mild bump (I have no love of radical cams and their lopey idle)
