The right one you can simply cap off. The one on the left should have two nipples. The larger of the two nipples hooks up to your brake booster via a hose. The other nipple can be capped off. Auto stores usually carry a variety pack of vacuum caps that you can use.

My rectangular vapor canister had three hoses attached: one to the top and two to the bottom. I removed the top hose and left it uncapped.
One of the bottom lines to the canister is a fuel vent hose from the gas tank - it connects to metal tubing towards the firewall. You want to keep that hose. The other bottom hose can be removed and the vapor canister nipple capped off. A drop of liquid dish soap on the nipple will aid installing the cap if it is too tight.
Those look like original hoses to your master cylinder...

yes wide open, they should be closed when cold
after it warms the choke should open
