To pull the engine, my manual says to lift the car, but doesn't tell how high. All I have are jacks, stands and my homemade stilts. In this photo, is my car high enough to do the pull ? Is there a dimension from the floor measured to some part of the car that would give me minimum?

Please don't put the weight of the car on that cinder block in that orientation. Cinder blocks are brittle and are designed to take load in compression. Lay that block down on it's side with the holes facing up. You don't want to put weight on 1 inch of "pressed sand" with nothing but open space under it.
And as for pulling motors, my best luck on other cars, has been to raise the back as high as I could and leave the front down. Easier to pull the motor and trans together. Not familiar with the process on a Spider for why you'd want the front raised up.

No, if the car hits that cement block that you are looking at, then I am in trouble. I just stick that there as added precaution. It is never supporting anything. When I have it up like this, it is supported with 4 jack stands, and sitting on my home made stilts for stability as well. (the stilts are made of solid blocks with 2x4 tops that I made to cradle each tire).
